Gut-Friendly Quinoa Salad
Ingredients:
1 cup cooked quinoa
1/2 cucumber, chopped (I prefer english)
1/2 cup cherry tomatoes, halved
1/4 red onion, finely chopped
1/4 chopped parsley
1 Tbsp olive oil
Juice of 1 lemon
Sea salt & pepper to taste
Directions:
In a bowl, combine quinoa, cucumber, tomatoes, onion, and parsley
Drizzle olive oil and lemon juice
Season with sea salt and pepper, toss, and serve
Note: Best served at room temperature or cold. Can be stored in an airtight container for up to 3 days.
