Gut-Friendly Quinoa Salad

Ingredients:

  • 1 cup cooked quinoa

  • 1/2 cucumber, chopped (I prefer english)

  • 1/2 cup cherry tomatoes, halved

  • 1/4 red onion, finely chopped

  • 1/4 chopped parsley

  • 1 Tbsp olive oil

  • Juice of 1 lemon

  • Sea salt & pepper to taste

Directions:

  1. In a bowl, combine quinoa, cucumber, tomatoes, onion, and parsley

  2. Drizzle olive oil and lemon juice

  3. Season with sea salt and pepper, toss, and serve

Note: Best served at room temperature or cold. Can be stored in an airtight container for up to 3 days.
