Miso Soup

Ingredients:

  • 4 cups organic vegetable broth

  • 2 Tbsp miso paste

  • 1 cup fresh spinach

  • 1/2 cup sliced mushrooms

  • 1 Tbsp grated ginger

  • 1 Tbsp sesame oil

  • Green onions (for garnish)

Directions:

  1. Heat vegetable broth in a pot over medium heat.

  2. Stir in miso paste until dissolved

  3. Add spinach, mushrooms, and ginger

  4. Simmer for 5-7 minutes

  5. Drizzle with sesame oil and garnish with green onions.

Note: Tofu or noodles is often added to miso. You’re more than welcome to add it if you’d like, although I prefer drinking the soup with minimal vegetables!
