Miso Soup
Ingredients:
4 cups organic vegetable broth
2 Tbsp miso paste
1 cup fresh spinach
1/2 cup sliced mushrooms
1 Tbsp grated ginger
1 Tbsp sesame oil
Green onions (for garnish)
Directions:
Heat vegetable broth in a pot over medium heat.
Stir in miso paste until dissolved
Add spinach, mushrooms, and ginger
Simmer for 5-7 minutes
Drizzle with sesame oil and garnish with green onions.
Note: Tofu or noodles is often added to miso. You’re more than welcome to add it if you’d like, although I prefer drinking the soup with minimal vegetables!
