Probiotic-Rich Kimchi Stir Fry

Ingredients:

  • 1 cup Kimchi (quality store-bought or homemade)

  • 1 cup broccoli florets

  • 1 bell pepper sliced

  • 1/2 cup shredded carrots

  • 2 Tbsp soy sauce or coconut aminos

  • 1 Tbsp sesame oil

  • 1 Tbsp rive vinegar

  • 1 clove of garlic, minced

  • 1 Tbsp sesame seeds (for garnish)

Directions:

  1. Heat sesame oil in a pan and saute garlic until fragrant.

  2. Add bell pepper, broccoli, and carrots. Stir fry for 4-5 minutes

  3. Add kimchi, coconut aminos, and rice vinegar.

  4. Stir fry for another 2 minutes. Garnish with sesame seeds and serve.

Note: Make it a full meal by adding shrimp or chicken!
